Smart Food Supply Chain – A digital platform for an intelligent, sustainable, and transparent food supply chain.
Co-funded by European Union, Italian Republic and Tuscany Region -PR FESR 2021–2027
Period: September 2024 – November 2025
Scope: Digital transition of businesses.

Smart Food Supply Chain is being developed with the aim of reducing food waste and improving sustainability in collective catering, acting across the entire supply chain: procurement, production, distribution, and consumption. Through a platform based on artificial intelligence and blockchain technology, the project aims to optimize food resource management, minimize waste, and enhance transparency and control over processes. The initiative aligns with the European Farm to Fork strategy and the United Nations 2030 Agenda for Sustainable Development Goals, particularly SDG 12, which promotes responsible production and consumption patterns.

PROJECT OBJECTIVES

  •  Develop a digital Sales and Operations Planning system based on AI to analyze past consumption patterns and forecast future demand, improving the balance between supply and demand.
  • Optimize food production using machine learning techniques that monitor inventory levels, user preferences, and seasonality, reducing waste during the production phase.
  • Integrate a blockchain platform to ensure full traceability of food products, from production to consumption, maintaining optimal conditions throughout the logistics process.

EXPECTED RESULTS

  • Significant reduction in food waste and operational costs
  • Improved efficiency in inventory management
  • Full transparency and traceability across the entire supply chain
  • Promotion of more sustainable and digitalized catering practices
